Technical and gastronomic days of the potato

According to historical studies, about 8000 years ago, potato cultivation began in the Andean highlands. Currently, in the southwest of Peru, potatoes continue to be cultivated as they were in ancient times. Potatoes made their way to Europe in the 16th century through the Canary Islands, with the municipality of San Miguel de Abona having a rich historical tradition in potato cultivation.

Potatoes are part of the territorial, economic and social identity of the southern part of the island, shaping unique agro-systems in the area and contributing to the landscape of this region.

Potatoes are one of the gastronomic treasures of the Canary Islands, especially the ancient varieties, highly recognized and valued by the culinary scene as a locally added-value product.

17:30 – TALK. Native peruvian potatoes: the Andean legacy to the world. (Presented by Mr. Manuel Méndez, consultant for international cooperation projects).

18:15 – TALK. Potatoes. Introduction, varieties, and cultivation. (Presented by Mr. Domingo Ríos. Head of Rural Development Service of Insular Council of Tenerife).

19:00 – SHOW COOKING. (Ms. Leydi Palacios, Peruvian chef. Owner of Aroma y Sabor restaurant).

19:45 – SHOW COOKING. Highlighting the Potato in Canarian Cuisine. (Mr. Juan Miguel Cabrera, chef and culinary consultant, and Mr. Ivan José González, chef and manager of Bodega San Miguel restaurant).

20:30 – CLOSING OF THE EVENT.

12:15 – MASTERCLASS. Vision of Peru. (Presented by: Mr. Jhosef Arias. His five restaurants in Madrid offer innovative cuisine with an authentic Peruvian style, representing his Peruvian origins).

13:00 – MASTERCLASS. Vision of the Canary Islands. (D. Pablo Pastor. Chef and Culinary Consultant.)

13:30 – Culinary conclusions and potato tasting.

13:45 – CLOSING OF THE EVENT.
